Watermelon Poke

Watermelon Poke – 4 ingredients

While this salad idea can be adjusted in so many ways – I’ve been loving this watermelon “poke” – making extra to enjoy later too!

How I make: Smaller cube fresh, chilled watermelon, small cube cucumber (aesthetically like poke, same size cubes, 60/40 or thereabouts, I do more watermelon than cucumber but your choice), dash of high grade olive oil and a dash of fresh ground salt, toss well and enjoy! yum-yum-yum!!

*other ideas are fresh mint or basil, feta, so many options, have fun experimenting while enjoying the health benefits of this delicious fruit!
